In the Small town of Palmer Lake, Colorado you will find La Zingara, A quaint little Italian restaurant opened by celebrated chef Franco Pisani (the Godfather of garlic) and acclaimed restaurateur Ted Sexton. La Zingara is ever as festive as the name implies. Fresh pastas drizzled with the freshly made sauces, classic entrees made from age-old family recipes and original dishes not served anywhere else, using the freshest ingredients or many imported from Italy. The menu offers a verity of veal, chicken, pasta, seafood, steaks and Neapolitan style pizza, La Zingara is truly on old school Italian Restaurant not to mention and a beautiful patio with incredible views

Franco’s recipe
Panzanella Salad

· 6 cups day old Italian bread, torn into bite-size pieces
· 1/4 cup olive oil
· 2 tablespoons balsamic vinegar
· 4 medium ripe tomatoes, cut into wedges
· 3/4 cup sliced red onion
· 10 basil leaves, shredded
· 1/2 cup pitted and halved green olives
· 1 cup fresh mozzarella, cut into bite-size pieces
· I cucumber sliced
· 1 teaspoon garlic
· salt and pepper
whisk together 1/4 cup of olive oil and balsamic vinegar, garlic and salt and pepper. Gently toss together the bread, tomatoes, onion, basil, olives, mozzarella cheese, and cucumbers toss with the vinaigrette and let stand for 20 minutes before serving.
